About Me

I’ve started My Nordic Feast to document my journey towards healing myself through food and feeding my baby healthy good stuff to grow on. I suffer from severe eczema and tried many ways to heal. Went 2 years eating vegan which really helped me. Today I eat a gluten-free diet mixed with an occasional serving of happy meat every once in a blue moon. I do eat fish and eggs, donโ€™t do refined sugar, coffee and alcohol also try to stay clear of nightshades (potato, peppers, aubergine and tomatoes) but will during this next year experiment with food and hopefully find a balance to stay eczema free. Here in this place I want to share and inspire with my road to a balanced life. Show people that gluten-free, vegetarian, and seasonal cooking can be inspiring. Iโ€™ll get inspired from recipes from favorite cookbooks, as well as recipes I write myself.
